Harkening back to the unique design that the Friedr. Dick company debuted in 1905, this distinctively styled 8-inch slicing knife from the Friedr. Dick 1905 Exclusive Series replaces the common rivets that mount the handle to the steel of the knife with a trio of metal rings. The symmetrical steel rings are inseparably connected to the molded plastic handle, using unique modern manufacturing processes, and it also complies with current high hygiene standards.
Made from high-quality German XCrMoVMn stainless steel--preferred by professional chefs--the blade is well sharpened and the knife enjoys perfect equilibrium, tapering at the tip. A finely dispersed martensitic structure is produced (starting with a hardness of over 60 HRc) thanks to a high-tech tempering process at temperatures of approximately 1950 degrees F and cryogenic treatment at temperatures as low as -310 degrees F. Targeted tempering in several stages at approx 392 degrees F carefully reduces hardness to 55HRc, which guarantees sharpness and retention of edge.
Manufactured in Germany, every Friedr. Dick finished knife is sharpened and honed by hand--just as it's been done since the company's founding in 1778 by Johann Friedrich Dick--and each knife is given the unmistakable Friedr. Dick etching. While this Friedr. Dick knife is dishwasher safe, it's recommended that you hand wash it using a mild dishwashing soap; rinse with water and dry thoroughly with a towel. This set of knives belongs in the Pantheon of Miserable Products. It is, bar none, the worst purchase I have made in my adult life.
Don't be seduced by the low,and seemingly irresistible, asking price. It's not even worth that drastically reduced amount. I should have heeded the reviews from others who said that these knives practically rust in front of your eyes. I am very conscientious about washing my knives in hot soapy water and drying them right away, but these blades are IMPOSSIBLE to safeguard from corrosion.
Finally, as a further knife to the heart (so to speak...), their cutting properties are minimal. I have sliced the tips of two fingers trying to get these dull blades through bread and vegetables. Unless you get a thrill from being maimed, avoid this cutlery like the plague. I wish I had sent them back almost immediately.

I bought this knife because I needed something very sharp to cut sushi. I'm pleased to say that I'm very happy with my purchase.
It is not your traditional chef's knife, and needs more care. It's wooden handle means that it cannot go through the dishwasher or be kept in water too long. This is probably why the knife is so well priced.
The Japenese steel is extremely hard which makes it harder to sharpen, but will keep an edge sharper than a razor, and longer than any German knife. The knife feels good in your hand and is of medium weight. It is more suited for professionals and knife enthusiast.

The Kyoto Ceramic company makes all kinds of stuff out of ceramics.From circuit boards and transmitters in mobile phones to excellent writing pens with sturdy ceramic tips, they've got their brand of excellence in everything.Their entire line of ceramic knives is no different!

Being hardened ceramic, this knife and its brethren cannot be rusted and the blade seems to stay sharper a lot longer because the edge doesn't need to be trued like steel.It's non-reactive to acids and bases and you can easily clean its surface with warm, soapy water.The weight balance and blade control are excellent and the knife seems to dance as it cuts.I am really impressed with the overall quality of the blade itself.There is only one caveat, but it is a BIG one:the blade WILL chip if you are not careful!Cutting on surfaces other than cutting boards (i.e.-plates or pizza stones) can cause tiny chips in the edge.Improper sharpening (you should get a sharpener specific for a ceramic knife and use it exactly as instructed) and throwing the knife in drawers without a blade cover will also chip the blade edge.Dishwashing is a no-no, since the edge might be damaged, as well.If you get some chips or nicks, the blade will still cut, but the edge will slowly become serrated instead of smooth.

I recommend getting a proper sharpener, bamboo cutting board and blade guard for this or any other ceramic knife so that you can make the knife last for generations!A good buy, overall, but only if you take care of it.

This is an amazing knife for the price.It fits beautifully in your hand and the weight is perfect.It is heavy with great leverage.I absolutely love to chop with it.I have Wustoff knife that i also like, but i have to admit for half the price this one is the winner. I can't imagine a better knife for this price on the market.

I'm really pleased with the feel and weight of these knives.They come pretty sharp, but need to be sharpened more.The blade is really thick, and heavy enough to give balance.The handle is shaped to fit nicely in your hand.I like the santuko one the best.The case it comes in is ok, but feels kind of cheap compared to the knives.This is the first case I've had with knives so they may all be that way.It's fine, it just seems flimsy like cardboard wrapped in cheap material.It does have a cool Iron Chef America stainless steel plate attatched to the front.

Highly recommended; nicely weighted and ergonomically-shaped with high quality blades and beautiful wood handles and presentation/storage box. The only negative is that the knives should be hand-washed and never put in dishwasher to preserve the wood handles, but that's a small price to pay for such beautiful and well-made steak knives. I lucked out and bought two sets (total 8 knives)at Marshall's for less than the price of one set on Amazon.
